🥦10-Minute Veggie Power Bowl (Healthy & Lazy Lunch)

Total time: 10 minutes
Serves: 1 (or double if you’re feeling generous)
Difficulty: You could do this half-asleep.

Ingredients:

  • 1 cup broccoli florets

  • 1 red bell pepper, sliced

  • ½ cup chickpeas (canned, drained, patted dry)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • Salt & pepper

  • Optional toppings: avocado slices, hummus, or a fried egg

Instructions:

  1. Toss all the veggies and chickpeas in olive oil, garlic powder, salt, and pepper.

  2. Add them to the air fryer basket liner (makes cleanup a breeze) and cook at 380°F (193°C) for 8–10 minutes, shaking halfway.

  3. While that crisps up, prep your toppings — or just scroll through Pinterest pretending you’re meal-prepping.

  4. Toss everything into a bowl and top with your favorites.
