🥦10-Minute Veggie Power Bowl (Healthy & Lazy Lunch)
Total time: 10 minutes
Serves: 1 (or double if you’re feeling generous)
Difficulty: You could do this half-asleep.
Ingredients:
1 cup broccoli florets
1 red bell pepper, sliced
½ cup chickpeas (canned, drained, patted dry)
1 tbsp olive oil
1 tsp garlic powder
Salt & pepper
Optional toppings: avocado slices, hummus, or a fried egg
Instructions:
Toss all the veggies and chickpeas in olive oil, garlic powder, salt, and pepper.
Add them to the air fryer basket liner (makes cleanup a breeze) and cook at 380°F (193°C) for 8–10 minutes, shaking halfway.
While that crisps up, prep your toppings — or just scroll through Pinterest pretending you’re meal-prepping.
Toss everything into a bowl and top with your favorites.
